Valentine’s Day is approaching, and not all of us can afford to take our partners to Nobu or Mastro’s. If you are in that situation, do not worry. I have you covered. Follow my steps below to a T and your partner will continue to come back for more.

There is a misconception about this meal. People have begun to associate it with a rainy day, where you are cuddled on the couch, watching your favorite shows, and eating. But that is where they have gone wrong. While that does go perfectly, this can be anyday. Breakfast, lunch, or dinner. That’s how good I make it. This isn’t just a meal; it’s an experience, a ritual even. As an expert in maximizing those in-between moments of life, I’ll guide you to the perfect feast that nourishes both body and soul. 


The Grilled Cheese: A Masterclass in Melty Perfection


A grilled cheese is deceptively simple, which is the first mistake an amateur would make. You cannot look over this step. This is the heart of the meal. If you do this right, it becomes a masterclass. Here’s how to achieve the golden, crisp exterior and gooey center. 


Ingredients


  • Sourdough Bread - “best bread for grilled cheese…because of its thick, dense, and sturdy texture” (Laurae)

  • Sharp cheddar (melts beautifully)

  • Gruyère - paired with cheddar creates the perfect complement (Love & Lemons)

  • Salted butter (softened)


Steps


  1. Butter the Bread: This is the most paramount step. Do not just drop butter in the pan. This ensures that every bite has the perfect crunch. 

  2. Mix the Cheeses: Our two cheeses complement each other very well. We need to make sure to layer the cheese to ensure the sharpness meets the smoothness of the Gruyère.

  3. Low and Slow: This isn’t a race. Great things take time. Cook the sandwich on medium-low heat. We need the cheese to be fully melted without burning our bread. Flip only once the first side is golden brown. 


Hopefully you haven’t messed up yet. But remember this is supposed to be a romantic day. We cannot just give our partner grilled cheese. There must be more. I know you are probably asking yourself, “how could I possibly top a grilled cheese”? It’s simple. Tomato soup. 


The Tomato Soup: The Perfect Partner


Tomato soup is the perfect partner for grilled cheese—just like you and your partner will be after this heartfelt Valentine’s Day dinner. Think of it as the perfect way to balance the rich, melty cheese with something slightly tangy, but still incredibly soothing.


Once again, we must be attentive. Mess the soup up, and the grilled cheese will automatically taste worse. Remember, your partner deserves the best, especially because you cannot afford dinner. Like all great relationships, a little extra care goes a long way. Here’s how to make the tomato soup just as spectacular as the sandwich.


Ingredients


  • 2 lbs of ripe tomatoes (or canned San Marzano tomatoes)

  • 1 onion, diced

  • 2 cloves of garlic, minced

  • 1 cup vegetable broth

  • ½ cup heavy cream

  • Salt, pepper, and a pinch of sugar

  • Fresh basil for garnish


Steps


  1. Sauté the Onions and Garlic: Cook them in olive oil until translucent, then add tomatoes and vegetable broth. Let it simmer for 20–30 minutes.

  2. Blend Until Smooth: Use an immersion blender or regular blender to create a velvety texture. Add the heavy cream for that extra layer of richness.

  3. Season to Taste: Adjust with salt, pepper, and a pinch of sugar if it’s too acidic. Top with fresh basil and a drizzle of olive oil.


The hard parts are over. We have the base of the meal down. Tell yourself, “Congratulations”. There is no need to stress now. Your partner is about to be wowed. Once your soup is silky smooth and perfectly seasoned, it’s time to serve. Ladle it into bowls and garnish with fresh basil and a little drizzle of olive oil. Now, you’ve got the perfect duo—just like you and your partner. The last part is the easiest by far. 



Potato Chips: Crispy Sidekick


Usually I would make homemade chips, but we are in a rush tonight. She is about to come over and you just finished making the soup. It’s okay. Do not stress. It’s your first time, and you’re not quite the expert like me. To compensate for that, we will have to settle for Lay's classic chips.

Do not overestimate simple things. You have just turned what someone would consider a “simple” meal into something special, a memory that will last in your relationship.
